Will the audio will be routed through loudspeakers?  You'll want your iTouch close (within a few feet) to one of the loudspeakers to minimize the echoes from the room walls.  Our brains do some audio processing so we don't really hear those echoes in person but they are definitely audible in a recording.  I assume you can control the record level in the recording app to avoid clipping the audio since you'll be near a loudspeaker.

Since you're recording spoken word instead of a vocal performance or music, the audio quality should be pretty good since it's a smaller range of frequencies and volume.
